Elaborated

This blue fish is anadromous, that is, it usually lives throughout the year in the cold seas of the world but lays and fertilizes its eggs in the estuaries. When the migration to spawn begins is when their meat is at its best. It feeds on smaller fish, crustaceans and insects. It has been the staple food in northeastern Europe for centuries and little by little it has been introduced into all cuisines. Most of the salmon consumed in Spain comes from aquaculture farms, mainly in Norway, Scotland and Chile.
